Ingredients

  • Grated carrot – 250g
  • Grated coconut – 1 cup
  • Milk – 2 cups
  • Sugar – 2 cups
  • Ghee – 2 tablespoons
  • Cardamom – A small pinch
  • Nuts & Almonds – For garnish

Method of Preparation

  1. Take a pan and add grated carrot and coconut.
  2. Add milk to the pan and keep the stove on medium flame.
  3. Cook the carrot, milk, and coconut for about 10 minutes until all the milk is absorbed by the carrot.
  4. Stir continuously to prevent burning and sticking.
  5. Once the carrot is cooked, add sugar and ghee.
  6. Stir continuously for about 5 minutes.
  7. Ensure that all the water left by the sugar is absorbed.
  8. Dry roast the mixture until the color of the carrot fades slightly.
  9. Turn off the stove and transfer the Carrot Halwa to a greased plate.
  10. Roast the almonds and nuts in ghee.
  11. Garnish the Carrot Halwa with roasted almonds and nuts.
  12. Serve warm and enjoy!
