Pork Masala

This is a special recipe of pork which actually melts in your mouth. As the name suggests, this pork curry is really a special one where I had used some secret ingredients. Here the pork is cooked initially in a pressure cooker and is then transferred to a kadai or pan for slow cooking, so that the complete flavor of the curry gets coated with the pork pieces evenly.

I had used drumstick stem in this recipe to enhance the flavor of the dish. The outer layer of the stem is taken using a knife and is them added along with the ingredients to be grinded. The next special ingredient used is the fenugreek seeds. The addition of fresh ginger and garlic along with the other ground ingredients provides marvelous taste in each single bite of this curry.

The total cooking time is 1 hour and this recipe can serve 6 persons. This aromatic gravy of pork goes well with rice, special kind of rice, chapatis, etc. You can prepare this recipe for any occasions. If you prefer less gravy curry, then you can dry roast the pork in the same kadai for some extra time so that you will get a tasty pork roast.

Ingredients

  1. Pork – 1 kg

  3. Chopped onions – 4

  4. n

  5. Chopped tomato – 1

  6. n

  7. Shallots – 6

  8. n

  9. Ginger – 2 inch piece

  10. n

  11. Garlic – 10 pods

  12. n

  13. Green chillies – 2

  14. n

  15. Mustard seeds – 1 teaspoon

  16. n

  17. Fenugreek seeds – 1 teaspoon

  18. n

  19. Vinegar – 2 teaspoon

  20. n

  21. Pepper powder – 1 tablespoon

  22. n

  23. Drumstick stem – 1 inch piece

  24. n

  25. Fennel seeds – 1 teaspoon

  26. n

  27. Turmeric powder- 1/2 teaspoon

  28. n

  29. Kashmiri chilli powder- 2 teaspoon

  30. n

  31. Coriander powder- 1 tablespoon

  32. n

  33. Salt – to taste

  34. n

  35. Oil – 3 tablespoon

  37. Coriander leaves – to garnish

Method of preparation

    n

  1. Take a pressure cooker and add oil to it

  2. n

  3. Add 2 chopped onions and sufficient salt and sauté till it turns the color to light brown

  4. n

  5. Grind ginger, garlic, green chillies, mustard seeds, fenugreek seeds, drumstick stem piece, fennel seeds and vinegar to form a paste

  6. n

  7. Add the ground paste to the onions

  8. n

  9. Sauté till the raw smell goes off

  10. n

  11. Now add turmeric powder, chilli powder and coriander powder, make sure the flame is low

  12. n

  13. Then add chopped tomato and cook till the tomato gets mashed

  14. n

  15. Further add the pork pieces and make sure all the pieces gets coated with the prepared masala

  16. n

  17. Sauté for 2 minutes and then pressure cook the pork till it is done

  18. n

  19. I had taken 2 whistles on high flame and then 8 minutes on low flame

  20. n

  21. The pork was cooked properly by that time

  22. n

  23. Transfer the pressure cooked pork to a nonstick kadai or pan

  24. n

  25. Now add the remaining 2 chopped onions to the curry along with pepper powder and keep it in low flame

  26. n

  27. You can see that the color of gravy gradually changes to dark brown

  28. n

  29. Enrich your taste buds by adding salt, pepper powder and vinegar as per your taste

  31. Garnish the curry with coriander leaves and serve hot with rice, chapatis, special rice, etc.
