Cream of tomato soup

Ingredients

  • Ripe tomatoes – 3 nos
  • Maida (all-purpose flour) – 15 grams
  • Ghee – 15 grams
  • Salt – 1/2 tablespoon
  • White pepper powder – 1/2 tablespoon
  • Sugar – 1/4 tablespoon
  • Fresh milk cream – 1/2 cup
  • Dry ginger powder – 1/4 teaspoon
  • Water – 300 ml

Method of Preparation

  1. Prepare the tomatoes
    Cut the ripe tomatoes into large pieces and cook them in a pressure cooker until tender.
  2. Make a paste
    Once cooled, transfer the cooked tomatoes to a mixer grinder and blend into a smooth paste.
  3. Cook the base
    In a pan, heat the ghee and add maida. Fry until it turns golden brown.
  4. Add the tomato paste
    Pour the tomato paste into the pan and stir well to combine.
  5. Season the soup
    Add salt, white pepper powder, sugar, and dry ginger powder. Mix thoroughly.
  6. Simmer
    Keep the flame on low and simmer for 2 minutes to allow the flavors to meld.
  7. Finish with cream
    Add fresh milk cream just before serving to enrich the soup and enhance its texture.

Serving Suggestion

Serve hot, optionally garnished with a swirl of cream or fresh herbs. This soup pairs wonderfully with croutons or toasted bread.
