Ingredients:

  • Cleaned Chicken pieces – 500 g
  • Pepper powder – 2 teaspoons
  • Turmeric powder – 1/2 teaspoon
  • Kashmiri chilli powder – 2 teaspoons
  • Saunf powder – 1/8 teaspoon
  • Crushed ginger – 1 inch piece
  • Crushed garlic – 6 cloves
  • Vinegar – 1 teaspoon
  • Green chillies – 2
  • Onion (sliced) – 2
  • Tomato (sliced) – 1
  • 2 cardamom, 2 cloves, and a small piece of cinnamon (powdered) – to taste
  • Curry leaves – 1 sprig
  • Ghee – 2 tablespoons
  • Oil – 1/2 cup
  • Salt – to taste

Method of Preparation:

  1. Clean and Prepare Chicken:
Start by washing and cleaning the chicken pieces thoroughly. Drain the excess water and ensure the chicken is dry.
  2. Marinate Chicken:
Add 1/4 teaspoon of turmeric powder, pepper powder, crushed ginger and garlic, salt, and vinegar to the chicken. Rub the mixture all over the chicken pieces and allow it to rest for a while.
  3. Steam Chicken:
After resting, steam the marinated chicken until it’s half-cooked. This method ensures that the chicken remains tender and retains all the flavors of the spices.
  4. Marinate Again:
Once the chicken is half done, marinate it again with 1/4 teaspoon of turmeric powder, spices powder, kashmiri chilli powder, and salt. Ensure the chicken is well-coated with the new spice mix.
  5. Fry the Chicken:
Heat oil in a pan and fry the marinated chicken pieces until they turn golden brown and crispy on all sides. Once fried, set the pieces aside.
  6. Prepare the Onion-Tomato Gravy:
In a separate kadai, heat ghee and sauté the sliced onions along with green chillies. Once the onions change color, add the sliced tomatoes and curry leaves. Cook until the tomatoes soften and blend well with the onions.
  7. Combine the Chicken:
Add the fried chicken pieces to the kadai and mix everything together until the chicken is well coated with the onion-tomato gravy.
  8. Serve and Enjoy:
This fried chicken dish is ready to be served! Enjoy it as a side dish with rice or chapatis. The combination of spices and sautéed vegetables gives it an irresistible taste that will leave everyone asking for more.

Tips for Extra Flavor:

  • The addition of saunf powder and various spices powders adds a unique flavor to this chicken fry. The mix of spices gives a depth of taste, balancing the richness of the fried chicken with a tangy and slightly spicy kick.
  • While most chicken fries are served in a dry form, this recipe mixes the fried chicken with a sautéed onion-tomato gravy, which adds a rich texture and extra flavor, making it a perfect match for your rice or chapatis.
