Ingredients

For the Pork:

  • Pork – 500 gm (cut into small pieces)

To Chop:

  • Onion – 2
  • Garlic cloves – 10
  • Ginger – 3-inch piece

All the above ingredients should be finely chopped.

For the Masala:

  • Green chilies – 6, sliced
  • Chili powder – 1.5 teaspoon
  • Coriander powder – 1.5 teaspoon
  • Turmeric powder – 0.5 teaspoon
  • Pepper powder – 1.5 teaspoon
  • Garam masala – 1 teaspoon
  • Crushed mustard – 0.5 teaspoon
  • Mustard sauce – 0.5 teaspoon
  • Tomato sauce – 1 tablespoon
  • Salt – to taste
  • Corn flour – 2 teaspoons
  • Coconut oil – 2 tablespoons
  • Curry leaves – 2 sprigs
  • Coriander leaves – for garnish

Method of Preparation

  1. Marinating the Pork:
    • In a bowl, mix turmeric powder, chili powder, coriander powder, salt, and both types of mustard. Rub this mix all over the pork pieces.
    • Add half of the onion, ginger, and garlic to the pork and mix well.
    • Let the pork marinate for about 2 hours to allow the flavors to meld.
  2. Pressure Cooking:
    • After marination, transfer the pork to a pressure cooker and cook until tender. Once done, set it aside.
  3. Preparing the Masala:
    • Heat coconut oil in a pan. Add one sprig of curry leaves and sauté the onion until translucent.
    • Add ginger, garlic, and green chilies to the pan. Sauté for a few minutes before adding pepper powder and garam masala. Stir the mixture for about 30 seconds to allow the spices to release their aroma.
  4. Combining the Pork and Masala:
    • Add the cooked pork to the pan with the masala mixture. Sauté well, ensuring the pork is evenly coated with the spices.
    • Mix the corn flour with a little water to create a smooth paste. Add this to the meat gravy, stirring continuously to thicken the sauce.
    • Add the tomato sauce and give everything a final stir.
  5. Finishing Touches:
    • Add the second sprig of curry leaves and stir everything together. Transfer the dish to a serving bowl and garnish with fresh coriander leaves.
