Ingredients

1) To Pressure Cook the Pork Ribs

  • Pork Ribs – 1 kg
  • Onions (chopped) – 3
  • Tomato (chopped) – 1
  • Ginger garlic paste – 1 teaspoon
  • Turmeric powder – 1/4 teaspoon
  • Coriander powder – 2 teaspoons
  • Kashmiri chili powder – 2 teaspoons
  • Pepper powder – 1 teaspoon
  • Soy sauce – 1 tablespoon
  • Tomato sauce – 1 tablespoon
  • Chili sauce – 1 teaspoon
  • Vinegar – 1 tablespoon
  • Salt – as required
  • Oil – 2 tablespoons

2) To Grill the Pork Ribs

  • Barbecue sauce – 3 tablespoons
  • Capsicum (cut lengthwise) – 1/2
  • Tomato (cut in round slices) – 1
  • Mozzarella cheese – 2 tablespoons
  • Pressure-cooked pork

Method of Preparation

Step 1: Pressure Cooking the Ribs

  1. Heat oil in a pressure cooker and add chopped onions.
  2. Add salt and sauté the onions until they change color.
  3. Add ginger garlic paste and sauté.
  4. Add turmeric powder, Kashmiri chili powder, pepper powder, and coriander powder.
  5. Sauté until the raw smell of the spices disappears.
  6. Add chopped tomatoes, close the lid, and cook until they are mashed.
  7. Add soy sauce, tomato sauce, chili sauce, and vinegar. Mix well.
  8. Add the pork ribs and pressure cook for 5 to 6 whistles or until the meat is tender.
  9. Allow the pressure to release naturally.
  10. Open the lid and mix barbecue sauce into the ribs.
  11. Remove excess oil from the pork fat and transfer the ribs and gravy to an oven tray.

Step 2: Grilling the Ribs

  1. Arrange capsicum, tomato, and cheese over the ribs and gravy.
  2. Preheat the oven to 180°C.
  3. Grill the cooked pork in the oven for 10 minutes.
  4. Switch to broil mode and cook for another 2 minutes until the cheese melts.
  5. Remove from the oven and serve hot.
