Choosing Vermicelli
You can use either plain vermicelli or roasted vermicelli for this recipe. If using plain vermicelli, first roast it in two teaspoons of oil or ghee until golden brown before proceeding with the recipe. I prefer roasted vermicelli for enhanced flavor.

- Roasted vermicelli – 2 cups
- Water – To cook vermicelli
- Peanuts – 3 tablespoons
- Mustard seeds – 1/4 teaspoon
- Cumin seeds – 1/2 teaspoon
- Chana dal – 1 teaspoon
- Urad dal – 1 teaspoon
- Curry leaves – 1 sprig
- Dry red chili – 1
- Chopped onions – 4 tablespoons
- Green chili – 1
- Chopped ginger – 1 teaspoon
- Finely chopped carrots – 4 tablespoons
- Chopped beans – 3 tablespoons
- Salt – 1 teaspoon
- Turmeric powder – 1/2 teaspoon
- Coriander leaves – To garnish
- Lemon juice – 1 lemon
Method of Preparation
Step 1: Cooking the Vermicelli
- Boil water in a vessel and add 1/2 teaspoon salt.
- Add the roasted vermicelli to the boiling water.
- Boil for 3 to 4 minutes or until the vermicelli becomes soft.
- Drain the water and allow the vermicelli to cool completely.
- Set aside in a bowl.
Step 2: Preparing the Upma
- Heat oil in a kadai (pan).
- Add mustard seeds and let them splutter.
- Stir in cumin seeds, chana dal, peanuts, and urad dal.
- Add curry leaves and dry red chili.
- Toss in chopped onions and sauté until they turn translucent.
- Add chopped ginger and green chili.
- Sprinkle 1/2 teaspoon salt and turmeric powder.
- Mix in chopped carrots and beans.
- Sauté for 1-2 minutes, then cover with a lid and cook for 2 minutes.
- Once the vegetables are soft, add the cooked vermicelli and mix well.
- Squeeze in lemon juice and garnish with coriander leaves.
