Method of Preparation
Preparing the Cake:
- Soak the chopped dates in 1 cup of hot water for 15 minutes.
- In a large mixing bowl, whisk together brown sugar and butter until creamy.
- Add the egg, followed by vanilla essence, and beat again.
- Sift together all-purpose flour, baking powder, and baking soda. Add them to the mixing bowl and fold everything using a spatula.
- Mash the softened dates and add them to the flour mixture.
- Grease a cake tin with butter and pour in the cake batter.
- Preheat the oven to 170° C for 10 minutes, then bake the cake for 30 minutes at the same temperature.
- Once the cake has cooled, remove it from the tin.
Preparing the Toffee Sauce:
- In a saucepan, melt the butter and brown sugar together.
- Once melted, add fresh cream to the pan.
- Let the sauce thicken, then switch off the flame.
How to Serve Sticky Dates Pudding:
- Pour some toffee sauce onto a serving plate.
- Cut the cake into large square pieces and place a piece on the sauce.
- Drizzle more warm sauce over the top of the cake.
