Idiyirachi: A Unique and Flavorful Dried Beef Dish

Most of you might be wondering about the name ‘Idiyirachi.’ It is nothing but shredded dry beef stir-fried with shallots and other ingredients. This dish is a true delight for all non-vegetarian food lovers.

What is Idiyirachi?

Idiyirachi is prepared by marinating beef with salt and turmeric and then sun-drying it for a week until it becomes completely moisture-free and turns black in color. Alternatively, beef can be dried using dryers, which take only two days for complete drying. If you start with 3 kg of fresh beef, you will get only 1 kg of dried beef after the drying process.

Availability of Idiyirachi

Idiyirachi is not commonly available everywhere, and even many restaurants do not serve it. However, packaged dried beef is now available in markets, though it tends to be expensive. Preparing Idiyirachi at home is a cost-effective option, allowing you to enjoy its authentic flavor.

Preparing Idiyirachi

Before making the stir-fried dry beef, it is essential to soak the dried beef in water. After 2–3 hours, the beef becomes softer, making it easier to crush. You can use a stone grinder for a fine texture or a mixer grinder for thin pieces.

The shredded dried beef is then sautéed with shallots, curry leaves, and other ingredients, resulting in a flavorful dish. Check out the recipe below and try making Idiyirachi at home. Once you do, you’ll surely prepare it again and again!
