Mashed Potato Masala is a delicious Indian side dish curry that is commonly served with chapatis and pooris. It is also popularly known as ‘Poori Masala.’ This curry is a perfect vegetarian combination when paired with hot pooris. Additionally, it can be used as a filling for dosa, creating the ever-popular and delectable Masala Dosa.

A Breakfast Delight

Whenever I plan to make poori for breakfast, I always prepare this mashed potato and carrot masala as a side dish. Since making pooris can be a bit time-consuming, this masala can be prepared the previous night and stored in the refrigerator. The next morning, simply reheat it and garnish with fresh coriander leaves. This way, you can focus on making pooris without any hassle.

This perfect combination of poori with potato masala is sure to be loved by kids. My daughter enjoys it and finishes her plate quickly. Always ensure that you use fresh potatoes and carrots to enhance the flavor and taste of this curry.

Traditional Preparation Method

The traditional way of making this curry involves boiling potatoes and carrots separately and then seasoning them with chopped onions and spices.

Regarding the ingredients, mustard seeds are initially added to hot oil, imparting a wonderful flavor to the dish. Split urad dal gives a subtle crunch. Fresh ginger adds a great aroma and taste, but you can also use ginger paste as a substitute. The only spice powder used in this recipe is turmeric powder, which I prefer in its organic form for a richer flavor and vibrant color.

This simple curry requires minimal ingredients and can be prepared effortlessly. If you have any leftovers, don’t worry! Just use them as a filling inside a dosa while making crispy dosas, and voilà—your delicious Masala Dosa is ready. Ingredients:

  1. Potatoes – 3 (medium-sized)
  2. Carrot – 1 (large-sized)
  3. Finely chopped onions – 2
  4. Green chillies – 2
  5. Ginger (finely chopped) – 1 cm piece
  6. Turmeric powder – 1/4 teaspoon
  7. Oil – 2 tablespoons
  8. Split urad dal – 1/2 teaspoon
  9. Mustard seeds – 1/4 teaspoon
  10. Water – 1/2 cup
  11. Salt – to taste
  12. Coriander leaves – for garnish

Method of Preparation:

  1. Pressure cook the potatoes and carrot until soft. Remove the skin, mash gently, and keep aside.
  2. Heat oil in a pan and add mustard seeds. Once they start to splutter, add split urad dal.
  3. Add chopped onions, green chillies, ginger, and salt. Sauté well until the onions turn golden brown.
  4. Add turmeric powder and sauté for a few more seconds until the raw smell disappears.
  5. Mix the mashed potatoes and carrot with the prepared masala. Cover with a lid and let it cook for 2 minutes on low flame.
  6. Turn off the flame and garnish the curry with fresh coriander leaves.
  7. Serve hot with chapatis or pooris for a satisfying meal.
