Preparation:

  • If using fresh pineapple, peel and finely chop or crush it.
  • If using canned pineapple, drain any excess liquid before chopping or crushing.

Cooking:

  • In a heavy-bottomed pan, heat a small amount of ghee over medium heat.
  • Add the chopped pineapple, followed by grated coconut, and sauté for a few minutes until it loses some moisture and the raw smell diminishes.

Thickening:

  • Continue cooking over medium-low heat, stirring frequently to prevent sticking.
  • The mixture will start to thicken as the moisture evaporates and will become denser and more cohesive.

Flavoring:

  • If desired, add a pinch of cardamom powder to enhance the flavor. Cardamom pairs well with the sweetness of the condensed milk and the tanginess of pineapple.

Setting:

  • As the mixture continues to cook and thicken, it will start to come away from the sides of the pan. This indicates it is ready to be set.

Shaping and Garnishing:

  • Grease a plate or a tray with a little ghee.
  • Transfer the cooked mixture to the greased plate and spread it evenly using a spatula.
  • Sprinkle the chopped nuts over the top, gently pressing them into the mixture.

  • Allow the pineapple burfi to cool at room temperature. As it cools, it will set further.
  • Once completely cooled and firm, cut it into desired shapes like squares or diamonds.

Ingredients:

  • Pineapple (small pieces) – 2 cups
  • Scraped Coconut – 2 cups
  • Sugar – 2 cups
  • Ghee – 1/2 cup

Method of Preparation:

  1. Heat ghee in a Kadai.
  2. Grind the pineapple slices and add them to the ghee.
  3. Add coconut and mix well.
  4. Add sugar and stir until the sugar melts.
  5. Cook until all the moisture is absorbed.
  6. The mixture will finally form a lump.
  7. Grease an aluminum tin with ghee and transfer the mixture to the tin.
  8. Spread it evenly and set it aside to cool.
  9. Refrigerate for one hour.
  10. Cut into squares and serve.

Note: Turn off the flame before the sugar melts completely and turns light brown while cooking.
