Evening snacks have always been a mandatory ritual in my home since childhood. My mom used to prepare delicious snacks before I arrived home from school. Interestingly, my brother also followed my tradition of having evening snacks. I prefer easy and simple sweet snacks along with tea or coffee. The snacks should also be made with minimal ingredients so that all the ladies in the kitchen do not have to spend their whole time cooking.

Today, I am here with a special recipe: Loveletter (Elanji), which is commonly enjoyed in the northern parts of Kerala. This delightful treat can also be packed into your kids’ tiffin box. In this recipe, grated coconut is rolled inside a crepe, making it a perfect evening snack. Do try this recipe and let me know who all are craving it!


Ingredients

For Batter:

  • Egg – 1
  • All-purpose flour/ Whole wheat flour – 2 cups
  • Water – 1 3/4 cups
  • Salt – 1/4 teaspoon
  • Sugar – 1/2 teaspoon

For Filling:

  • Grated coconut – 1 3/4 cups
  • Sugar – 5 tablespoons (adjust as per your taste)
  • Cardamom powder – 1/4 teaspoon

Other Ingredients:

  • Ghee – 1/2 teaspoon
  • Oil – 1 teaspoon

Method of Preparation

  1. Heat a kadai and add ghee.
  2. Add grated coconut and sugar, then mix well.
  3. Add cardamom powder and stir.
  4. Switch off the flame when the sugar melts completely.
  5. Transfer the mixture to a bowl and let it cool.
  6. Mix all the ingredients listed under batter to form a smooth, lump-free batter (similar to dosa batter consistency). I have used all-purpose flour for this recipe.
  7. Heat a pan and lightly brush it with oil.
  8. Pour one big ladle of batter onto the pan and spread it evenly like a dosa.
  9. Cook both sides without letting the crepe change color.
  10. Place 2 or 3 tablespoons of the coconut filling inside each crepe and roll it tightly.
  11. After rolling, put it back on the pan for a few seconds and turn it once.
  12. Serve hot and enjoy!
